Chef Junya Yamasaki is back, and we couldn't be happier to have him in the kitchen again.
A self-taught chef, fisherman, and the visionary behind YESS Restaurant, Chef Junya has spent his life in quiet pursuit of the perfect ingredient. Shaped by Zen practice, the slow seafood movement, and years working at London's acclaimed Japanese noodle bar Koya, he cooks with a kind of stillness that shows up on the plate. Traditional Japanese technique, California's finest produce, and a deep respect for what each season actually offers.
Japanese home cooking is built on restraint. For the ingredient. For the season. For the quiet satisfaction of a meal that doesn't try too hard. A bowl of rice, something simmered, something pickled, something fresh alongside. Not much needed. Nothing wasted.
