Our Olive Oil is the stuff of legends.
Many of the trees in our blend are 20 to 30 years old, while one remarkable grove of nearly 600 gnarled trees is close to 200 years old. Those historic trees were planted during the era of the Spanish missionaries by a Danish family intent on producing Olive Oil, and they continue to bear fruit today. It’s why our blend is so incredibly rare, including tree varieties that are nearly impossible to find in the U.S.
The trees are lovingly tended to season after season. Each Olive is picked gently by hand and pressed immediately to preserve critical freshness, far sooner than the industry norm of up to 24 hours. This also ensures a rich polyphenol content of 385 mg/kg, which gives Olive Oil its core health values. Anything over a 250 mg/kg count is considered high, so ours far surpasses that average.
The farm operates as an organic, permaculture-based system, adhering to the highest standards of regenerative agriculture.
The paste from pressing Olives is turned into natural compost tea
to fertilize the trees and benefit pollinators. Their drought-tolerant groves are only irrigated with water from their pond, which is
rich in soil-beneficial micro-organisms. In all of it, they honor
the link between people, the land, and the community.
