This Summer, the idea for our White Truffle Olive Oil took root in the forests of Forcoli, Italy, where my mother and I joined the Savini family, who have been Truffle-hunting these woods for generations. Led by Luca Campinotti and his trio of extraordinary dogs, we spent the morning slipping through dappled light and fallen leaves, watching the dogs circle and scratch, then gently unearth the treasure below. The scent of warm earth and oak leaves, the thrill of discovery — became the genesis of this Olive Oil.
White Truffles are nature’s greatest riddle. Their season is fleeting, their growth a mystery — hidden beneath Oak and Hazelnut trees, found only by instinct, patience, and the keen noses of trained dogs. They refuse cultivation, appearing only where the soil and rain conspire just right. That uncertainty is their magic: the wildness that cannot be tamed.
When married with our Estate Extra Virgin Olive Oil, the result is transcendent — a buttery, nutty, and profoundly umami elixir, where the Truffle’s perfume lingers long after the first drizzle. A single spoonful transforms a dish: silk over Risotto, velvet on roasted Potatoes, gold across soft-scrambled Eggs.
A celebration of craft, curiosity, and the untamable beauty of nature.

Ingredients
Italian White Truffle Infused Olive Oil. All organic.
A limited-edition bottle — full of umami and buttery warmth.
Our first Flamingo Estate olive oil. We are enjoying the Tuscan White Truffle and the California Harvest EVOO were on our table tonight. The truffle was front and center in the Tuscan - no doubt what we were enjoying. The slight bite on the backend was a surprise but not off putting.
The California Harvest will be my favorite for its versatility - in cooking or at the table. Just beginning to experiment.

White truffle oil
This white truffle oil is a wonderful addition to my pantry. The deep earthy scrumptious flavor is a pleasure to pour on just about everything. Not too strong, but a little goes a long way with a smooth flavoring. Thank you!
