We begin with Trebbiano and Lambrusco Grapes, the foundation of traditional balsamic, and ferment them slowly with pressed organic Calabrian Figs, chosen for their syrupy sweetness and dense flesh. The blend is aged in Oak barrels, where time and air work their quiet transformation — softening the bright acidity into a velvety sweetness full of depth. The result is a silky, aromatic Balsamic that hums with umami and fruit — equal parts sweet, tangy, and wood-smoked.

Fennel pollen is sometimes called “the spice of angels” — prized in Tuscany and Lazio for its golden hue and honeyed aroma. Our version begins with our own Heritage Extra Virgin Olive Oil — grown and pressed in Ojai, CA — infused in-house with hand-dried Fennel pollen from Carranza Family Farms, cultivated regeneratively along the California coast. A balanced play of flavor that captures the rich, peppery vibrancy of the Oil, mixed with the full floral complexity of the Fennel.
