Sacred Summer Herb Pasta

Ingredients
Fresh Pasta 1 lb
Corn Kernels Several ears’ worth, shaved from the cob
Valentine Cherry Tomatoes A few handfuls, halved
Fresh Figs As needed, halved, brushed with olive oil & grilled
Garlic A few cloves, thinly sliced
Fresh Basil Abundant amount, torn
Fresh Sage Abundant amount, crisped in brown butter
Fresh Tarragon A few sprigs
Fresh Marjoram A few sprigs
Fresh Oregano A few sprigs
Lemon 1, for zesting
Burrata As needed
Olive Oil As needed
Fig Balsamic Vinegar As needed
Flaked Salt To taste
Black Peppercorns To taste, freshly ground
Steps
  1. Bring a large pot of water to a rolling boil, and add a few tablespoons of kosher salt. Cook pasta until al dente, 3-4 minutes. Drain, reserving 1 cup of pasta water.
  2. While the pasta is cooking, eat several glugs of Olive Oil in a large saucier. Add Garlic, and sauté for 30 seconds until just soft and fragrant. Add Corn and Tomatoes, cooking until just soft.
  3. Add drained Pasta, a bit of pasta water, and a hefty pinch of Summer Herbs to the pan, and toss vigorously until well-incorporated.
  4. Plate Pasta and Vegetables on a big platter. Add torn Burrata, grilled Figs, more fresh Herbs, and the zest of one Lemon. Finish with drizzles of Olive Oil and Fig Balsalmic, and flaked salt and fresh ground pepper to taste.
  5. Best enjoyed outdoors and under the stars.
