Chard and Potato Taco with Salsa Verde

Ingredients
FOR TACOS-
Chard4 lb
Potatoes2 lbs yellow round
Yellow Onion2
Butter100 grams
Flamingo Estate Extra Virgin Olive Oil1/4 cup
Saltto taste
Heirloom Corn Tortillasfor tacos
FOR SALSA VERDE-
Avocados1 lb
Tomatillogreen, 1 lb
White Onion1/4 of 1
Serrano Peppers2
Cilantro1 cup of leaves
Lemonsjuice of 2
Saltto taste
Water30 ml, cold
Steps
  1. FOR TACOS:
  2. Boil the potatoes with salt and cut into squares afterwards.
  3. Cut the chard into thick slices.
  4. Slice the onions, thin.
  5. In a large pan melt the butter and add the olive oil.
  6. Caramelize the thinly sliced onions in the pan, slowly moving on low heat.
  7. Add the chard and sauté for 3-4 minutes.
  8. Add the potato squares.
  9. Sprinkle salt and let cook for 10 more minutes.
  10. Heat the tortillas, fill with the chard and potato mix, add salsa verde. Enjoy.
  11. FOR SALSA VERDE:
  12. In blender, mix all the ingredients. Depending whether you prefer a chunky salsa or liquid, leave for 1-3 minutes.
