Flamingo Estate Mole Sauce with Chicken and Pickled Onions

Ingredients
MOLE SAUCE
Mole1 jar
Chicken or vegetable broth2 cups
CHICKEN AND BROTH FOR MOLE SAUCE
Chicken leg quarters5
Medium yellow onion1
Water to cover
Bay leaves2
Avocado leaves (optional)2
Salt2 Tbsp
PICKLED RED ONIONS
Small red onion, julienned1
Fruit vinegar2 Tbsp
Pinch of salt
Sesame Seeds, for Garnish
Steps
  1. MOLE SAUCE
  2. Add mole sauce to a saucepan and over medium low heat, begin frying the mole and stirring to break up the paste. Careful to not let it scorch. After about 5 minutes add in the broth and whisk continuously until it’s come together as a smooth sauce.
  3. Depending on the texture you want to achieve, you can reduce the broth to make a thicker mole or add some more for a silky loose mole. Wait until after you reduce to adjust seasoning if you aim for a thicker sauce.
  4. CHICKEN FOR MOLE
  5. In a large stock pot, add in all the ingredients and simmer over medium-low heat until tender.
  6. Remove chicken from pot, reserving the bones broth for the mole or for rice.
  7. Dress the chicken with a generous spoonful of mole and garnish with pickled red onions and sesame seeds.
  8. PICKLED RED ONIONS
  9. Combine onion, vinegar, and salt in a bowl or jar. Let pickle in the fridge for one hour.
