This limited-edition batch of Estate Honey is infused with threads of precious Saffron, organically grown by the only Saffron farm in California.

Everything about this Honey is a treasure. Saffron — the rarest spice on earth — is harvested from the fragile Crocus sativus flower, which blooms only once a year. Each blossom yields just three crimson stigmas, hand-plucked within an hour of opening. It takes more than 200,000 blossoms to make a single pound — a devotion that borders on the sacred.

We fold generous amounts of this luminous spice into our Estate Honey, gathered from the lower orchard at Flamingo Estate. This is our finest Honey, harvested in small batches and usually reserved for family and friends. Our Bees feed on flowering Rosemary and Lavender that grow in abundance around the Olive Trees.

The result is a golden elixir alive with umami, warmth, and impossible depth — tasting of sunlight, dry earth, and slow luxury. Its richness builds with every spoonful: fruit, spice, and smoke in gentle harmony.

Melinda Price and Simon Avery grow our Saffron at Peace & Plenty Farm in Northern California — the only organic Saffron farm in the United States. Their fields are tended entirely by hand using regenerative methods: no-till soil practices, cover cropping to sequester carbon, and never a drop of herbicide or pesticide. Saffron thrives in scarcity. It needs little water — often none at all — and rewards patience with its vivid red threads. Each stigma is plucked, dried, and sorted by hand, never mechanized. This is true agricultural artistry — slow, precise, and guided by the rhythm of the earth.
