Sumac Cherry Cheesecake Pops

Ingredients
Coconut Cream1 cup, shaken
Cream Cheese7 oz plain
Confectioners Sugar3/4 cup
Salt1/4 tsp
Dark Chocolate3 tbsp chopped
Sugar1 tbsp
Cherries1 1/3 cup, pitted
Lemons1/2 of one, juiced
Sumac1/4 tsp
Star Anise1/8 tsp, grated
Steps
  1. Cook cherries with sugar, lemon, spice for about ten minutes, mashing cherries lightly with the back of a spoon as they cook.
  2. Make creamy base by whisking together coconut cream, cream cheese, confectioners sugar and salt.
  3. Layer whipped cream with cherries into popsicle molds with chocolate.
  4. Freeze until set and enjoy!
