Ingredients
- 6 eggs
- 1 tsp mirin
- 1 1/2 tsp tamari
- 1/4-1/2 tsp rock salt
- 1/4 tsp turmeric
- 1 tsp toasted sesame oil
- 1/8 tsp pepper
- 2/3 cup water
- 1 carrot, diced
- 1 scallion, sliced
- Uni / fish roe, to serve
Steps
- Whisk eggs in a medium bowl. Add all seasonings and strain egg mixture through a sieve.
- In a small pot, bring 2/3 cup water to boil.
- Add veggies, then add egg mixture, stirring well. Cover and cook on low for about 4-6 minutes.
- Add uni and roe to top and a drizzle of sesame just before serving.
