Ingredients

  • 6 eggs
  • 1 tsp mirin
  • 1 1/2 tsp tamari
  • 1/4-1/2 tsp rock salt
  • 1/4 tsp turmeric
  • 1 tsp toasted sesame oil
  • 1/8 tsp pepper
  • 2/3 cup water
  • 1 carrot, diced
  • 1 scallion, sliced
  • Uni / fish roe, to serve

Steps

  • Whisk eggs in a medium bowl. Add all seasonings and strain egg mixture through a sieve.
  • In a small pot, bring 2/3 cup water to boil.
  • Add veggies, then add egg mixture, stirring well. Cover and cook on low for about 4-6 minutes.
  • Add uni and roe to top and a drizzle of sesame just before serving.
