Makes about 12 oz jam

Ingredients

  • FOR KAYA:
  • 1 - 13.5 oz can coconut cream
  • 3 eggs
  • 1/4 cup coconut sugar
  • 1/2 tsp rock salt
  • 4 pandan leaves, or 1 tsp vanilla extract
  • 2 tsp cornstarch
  • FOR TOAST:
  • Toasted bread
  • Cold butter, sliced thin

Steps

  • FOR KAYA:
  • In a blender add all ingredients and blend until smooth.
  • Add the resulting mixture to a double boiler and set to a low simmer.
  • Regularly stirring to prevent curdling, cook in the bain marie for about 25 minutes until thickened.
  • Pour jam through a sieve and blend again until smooth.
  • Store in an airtight jar and refrigerate overnight to set.
  • FOR TOAST:
  • On toasted bread, add cold butter slices to one half, and spread a layer of kaya over the other.
