Makes about 12 oz jam
Ingredients
- FOR KAYA:

1 - 13.5 oz can coconut cream
- 3 eggs
- 1/4 cup coconut sugar
- 1/2 tsp rock salt
- 4 pandan leaves, or 1 tsp vanilla extract
- 2 tsp cornstarch

- FOR TOAST:
- Toasted bread
- Cold butter, sliced thin
Steps
- FOR KAYA:
- In a blender add all ingredients and blend until smooth.
- Add the resulting mixture to a double boiler and set to a low simmer.
- Regularly stirring to prevent curdling, cook in the bain marie for about 25 minutes until thickened.
- Pour jam through a sieve and blend again until smooth.
- Store in an airtight jar and refrigerate overnight to set.

- FOR TOAST:
- On toasted bread, add cold butter slices to one half, and spread a layer of kaya over the other.
- Enjoy!
