Ingredients
- 4 cup cucumber
- 1 avocado
- 2/3 cup coconut yogurt
- 1 1/3 cup water
- 1 small lemon, juiced
- 1/4 cup fresh mint
- 1 tsp borage
- 1 tsp coriander
- 2/3 cup arugula
- 1 tbsp shallot
- 1 tbsp olive oil

- extra borage for garnish
- coconut yogurt and toasted pumpkin seeds to serve
Steps
- Blend all ingredients together until smooth.Â
- Top with yogurt, toasted seeds and borage to serve.
- Enjoy!
