Ingredients

  • 4 cup cucumber
  • 1 avocado
  • 2/3 cup coconut yogurt
  • 1 1/3 cup water
  • 1 small lemon, juiced
  • 1/4 cup fresh mint
  • 1 tsp borage
  • 1 tsp coriander
  • 2/3 cup arugula
  • 1 tbsp shallot
  • 1 tbsp olive oil
  • extra borage for garnish
  • coconut yogurt and toasted pumpkin seeds to serve

Steps

  • Blend all ingredients together until smooth. 
  • Top with yogurt, toasted seeds and borage to serve.
  • Enjoy!
