Strawberry Marigold Agua Fresca

Ingredients
Water4 cups
Granulated Sugar1/2 cup
Strawberries1 lb, stemmed & cleaned
Lime Juice1/4 cup
Mexican Marigold12 sprigs of, plus extra to garnish
Ice Cubesto serve
Steps
  1. Combine water, sugar, and marigold in a pot. Warm the mix over medium heat and stir until the sugar has dissolved. Set aside and allow to cool for 15 minutes, then remove the marigold sprigs. Add strawberries to a blender and process until smooth. Combine marigold solution, strawberry puree, and lime juice. Serve over ice and garnish with fresh marigold.
  2. NOTE: Mexican marigold can be found all across LA. The plant has been used to treat an upset or queasy stomach, help with digestive issues, and to soothe discomfort of toothache.
