Japanese Sweet Potatoes With Sour Orange

Roasted until deeply caramelized and impossibly tender, these Sweet Potatoes are finished with a bright, savory compound butter made with Sour Orange Zest and Green Garlic. A final squeeze of Citrus and a pinch of flaky Salt bring everything into balance — rich, sweet, tangy, and just a little bit smoky from the oven.

Butter½ lbs
Zest of Sour Orange1 Orange
Green garlic2 stalks (chopped)
Japanese sweet potato
Maldon Salt
Steps
  1. Temper butter and when soft, combine with zest and green garlic.
  2. Place sweet potato on a sheet tray with a rack and bake for 90 minutes at 450 degrees.
  3. Slice open, top with compound butter, a squeeze of sour orange juice and maldon.
  4. Eat!
