Winter Squash Roasted in Garlic Olive Oil

Ingredients
Winter Squash4 small, such as Carnival, Hubbard, Kabocha, Butternut or Honeynut
Sea Saltto taste
Flamingo Estate Garlic Olive Oil1/2 cup, plus more to serve
Steps
  1. Preheat oven to 350°F.
  2. Wash and dry the squash thoroughly, then cut in half. Place into a bowl and toss with sea salt and a splash of the Flamingo Estate Garlic Olive Oil.
  3. Add the remaining Garlic Olive Oil to an oven dish. Place on the stove over medium heat. Once hot, add the squash cut side down, then transfer to the oven.
  4. Roast for 30 minutes, or until the cut surface is deeply golden and the flesh is fork tender.
  5. Serve on a warmed platter garnished with more Garlic Olive Oil.
