Shaved Root Salad with Grapefruit Thyme Dressing

Ingredients
Carrots5, shaved
Beets2, shaved
Endive2, chopped
Radishes2 small, shaved
Napa Cabbage1/4 head, chopped
Grapefruit1 zested
Grapefruit Juice1 1/4 cup (juice of about 1 grapefruit)
Olive Oil1/8 cup
Thyme3-4 sprigs
Sea Saltto taste
Black Pepperto taste
Sunflower Seedsor pumpkin seeds, toasted to serve
Steps
  1. Destem the thyme and whisk all dressing ingredients together. Season with salt and pepper to taste.
  2. Dress salad and toss well. Serve garnished with toasted pumpkin or sunflower seeds.
