Pasta ai Broccoli (Spicy Broccoli Ragu Pasta)

Ingredients
Broccoli6 large heads, with stems
Dried Crushed Red Pepperto taste
Garlic10 cloves
Flamingo Estate Extra Virgin Olive Oilto saute
Parmigiano Reggiano1 quart grated
Farfalle Pasta1 box
Kosher Saltto taste
Steps
- Steam your broccoli until just tender. Remove from the steamer and chop into irregular chunks, this will not matter as most of the shape will be lost in cooking.
- Peel and chop your garlic. In a medium saucepan, heat 8 tablespoons of oil and fry your garlic until it just starts to color. Add your chili flakes to taste. Now add your broccoli with a tablespoon of salt and stir. Turn the heat to medium low and stir every so often, adding a splash of water as needed, until the broccoli starts to fall apart. Then let the broccoli caramelize lightly in the pan.
- Place a medium sized pot ¾ full of water over high heat. Let it come to a full rolling boil and add 2 handfuls of salt so the water tastes a little like the ocean. Add your pasta all at once and stir to prevent sticking. Cook until the pasta is al dente. Reserve a mug of pasta water and then drain pasta through a colander. Add your pasta to the sauce and mix. Now add your Parmigiano and mix again. Plate and enjoy!
