Onion Steak & Fried Egg Sandwich

Like I said, Onion is the Star right now. And pan-fried Onion and Egg sandwich was my favorite post-clubbing midnight treat when I was a student in UK. ( Yes, not Sin Instant Noodle. ) It cannot be any more simple than that. I would be very happy if someone can try with the prestige Flamingo Estate Veggie Box Onions & Eggs.

Ingredients
Young Sweet Onion 1 large
Eggs 1–2
Avocado or Grapeseed Oil 1–2 tbsp
Butter 1 tbsp
Bread 2 slices
Salt ¼ tsp
Black Pepper ⅛ tsp
Sauce of Choice 1–2 tbsp
Steps
- Cut the large Young & Juicy Onion 1/2 inch thickness.
- Heat the large frying pan medium hot, pour good mount of oil. I use natural oil like avocado oil or grape seed oil, but you can use olive oil, if you like. Put the onion first, sprinkle some salt on top and cook till the bottom get nicely golden brown. Flip the onion, then crack open an egg or two and put on the remained space on the pan. Sprinkle some salt and freshly crushed black pepper on top of Onion and Egg and fry till they are done. If the onion get cooked before the egg is done, take it out and save it. You can also add some butter in the middle to add some flavor, if you like.
- While you are frying the onion and egg, toast your bread, spread the butter and wait.
- Assemble the sandwich as Toast, Onion, Egg, Toast order.
- You can eat just like that, but for a post-party food, you want to add the sauce. My favorite was British HP sauce, which is equivalent of Tonkatsu sauce in Japan. But here, you can try with any BBQ sauce or Ketchup & Tabasco. I’m sure any spicy Mexican sauce will go as well. You gotta eat what you gotta eat.
