Little Gem Salad with Shallot Vinaigrette

Ingredients
Little Gem Lettuce2 heads
Radishes1 large pink, shaved
Pistachios2 ounces of (or your favorite nuts or seeds)
Pomegranate Seeds1 ounce
Za'atar1 tbsp
Fresh Soft Herbshandful (dill, cilantro, tarragon, basil.. you can use any or all!)
DRESSING
Flamingo Estate Extra Virgin Olive Oil1/2 cup
Lemon Juice1/4 cup
Sherry Vinegar1 tbsp
Shallot1 minced
Kosher Saltto taste
Steps
  1. Whisk dressing ingredients together, add salt to taste.
  2. In a large bowl add all of the salad ingredients except the herbs and za’atar.
  3. Toss with the dressing. Add herbs and za’atar at the end.
