Ingredients

  • 2 heads little gem lettuce
  • 1 large pink radish, shaved
  • 2 ounces of pistachios (or your favorite nuts or seeds)
  • 1 ounce pomegranate seeds
  • 1 tbsp za’atar
  • Handful of fresh soft herbs (dill, cilantro, tarragon, basil.. you can use any or all!)
  • For Dressing
  • 1/2 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 tbsp sherry vinegar
  • 1 minced shallot
  • Kosher salt

Steps

  • Whisk dressing ingredients together, add salt to taste.
  • In a large bowl add all of the salad ingredients except the herbs and za’atar.
  • Toss with the dressing. Add herbs and za’atar at the end.
  • Enjoy!
