Hamachi Sashimi and Māmaki Dashi with Cherry Tomatoes

Ingredients
Liquids and Broths
Water2 cups
Light Soy Sauce1 tablespoon
Yuzu Bottled or Fresh Citrus Juice1 teaspoon
Herbs and Spices
Māmaki + ‘Ulu Herbal Tea Blend1 tablespoon
Kombu2 (4-inch piece)
Bonito Flakes1/2 cup
Seafood and Garnishes
Fresh Fish Hamachi (sushi grade)
Shiso Leaf
Peeled Flavorful Cherry Tomatoes1 cup, halved
Sesame Seeds1 teaspoon
Steps
  1. Prepare the dashi by combining water and kombu, let that boil and light soy sauce, yuzu juice, Māmaki + ‘Ulu Herbal Tea Blend, and bonito flakes.
  2. Allow the dashi to cool slightly.
  3. Add the peeled cherry tomatoes to the dashi and let them soak to enhance their flavor.
  4. Assemble the sashimi with fresh Hamachi, shiso leaf, and the soaked cherry tomatoes.
  5. Garnish with sesame seeds.
