FRUIT FILLING
Seasonal Fruit (nectarines, peaches, or cherries) ~4 nectarines or peaches, or a few handfuls of cherries
Tapioca Starch 1 tbsp
Coconut Sugar 1–2 tbsp
Cinnamon 1/4 tsp
Cardamom Dash
Lemon Zest Zest of 1/2 lemon
Lemon Juice 2 tbsp
Vanilla Paste 1 glob
BATTER
Almond Flour 1 1/2 cups
Tapioca Flour 1/4 cup
Coconut Sugar 1/4 cup
Salt Hefty pinch
Baking Powder 1 1/2 tsp
Cold Butter 8 tbsp
Milk 4 tbsp
Egg Yolk 1
Steps
- Butter a baking dish. De-pit and chop fruit, then toss with the remaining filling ingredients until evenly coated. Scatter into the prepared dish.
- For the batter, combine almond flour, tapioca flour, coconut sugar, salt, and baking powder. Cut in cold butter until the mixture resembles coarse crumbs. Add milk and egg yolk and stir until just combined, don't overmix. Spoon or pour over the fruit filling.
- Bake at 375°F for 25–30 minutes, until the top is golden brown and the fruit is bubbling at the edges. Let rest for 10 minutes before serving.
