The Campari soda has become ubiquitous in my world with the beginning of a summer meal in Umbria. When greeted at any door there is an enveloping warmth inviting you in. While your cheeks are still being kissed and your body smothered with golden light the host asks the important questions, “Campari?”, “Vino?”. The questions are one word and they will continue asking them until you respond with a resounding and excited answer. Mine has always been “Campari!”. This delightful drink takes me to a garden terrace in the small Umbrian towns that I have come to know and love deeply.
- 4 kumquats (or 1 slice other citrus)
- 2 oz Campari
- 3 oz FE Pink Moon
- Sparkling Water
- Place the kumquats in a rocks glass and using a muddler or the end of a spoon smash them until they are broken open and have released their juices. Add ice to fill the glass. Add Campari and rosé. Top off with sparkling water. Give a gentle stir to combine.
