Ingredients

  • 1 cup heavy cream
  • 1 cup greek yogurt
  • 1/8 tsp saffron threads
  • 3 cardamom pods, ground
  • 1/8 tsp clove, ground
  • 1 tsp vanilla paste
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 2 tsp arrowroot powder
  • 1 1/8 tsp agar agar
  • raw honey and passion fruit to serve

Steps

  • Soak saffron threads in 1 tablespoon of hot water.
  • In a medium pot, whisk together heavy cream, ground cardamom, vanilla, sugar, salt, clove and arrowroot and bring to a bare simmer.
  • Add saffron, yogurt and agar agar and cook for another 4 minutes, whisking well. Pour into serving ware and chill until set, about 4 hours.
  • Enjoy drizzled with raw honey and passion fruit to serve!
