Watermelon and Feta Salad with Lime and Salsa Macha

When I lived in Italy, people used to say that if you were feeling blue, you should eat red. This salad proves the point. Cold watermelon with salty feta is already a near-perfect Summer combination, but the lime and salsa macha make it even better, adding brightness, smoke, and heat. The basil softens the edges and brings a little perfume. I also love that this is one of those dishes you can have ready before everyone arrives, which is always a blessing when a house is filling up with people. It is the kind of salad that disappears very quickly on a hot day.

In this Recipe

Ingredients
Watermelon (cubed) ¼ large or 1 small (about 3 lb)
Lime juice Juice of 1 lime
Salt Pinch
Salsa macha 2–3 tbsp
Basil leaves ¼ cup
Feta cheese 4 oz
Steps
  1. Cut the watermelon into 1 inch cubes and add to a large serving bowl.
  2. Squeeze the lime over the top of the watermelon and season lightly with salt. Cube or crumble the feta into ½ inch chunks and add to the bowl.
  3. Add the salsa macha, 2 tablespoons if you want it less spicy, 3 tablespoons if you want it spicier, tossing to mix.
  4. Tear the basil leaves into the salad and serve.
