Ingredients

  • 12 oz Firm White Fish

 

  • FOR THE MARINADE
  • 1/2 tsp turmeric
  • 1 tsp fish sauce
  • 2 tbsp plain coconut yogurt
  • 3 tbsp Oil
  • 1 garlic clove, minced
  • 1 small shallot, minced
  • 2 inch galangal, minced

 

  • 2/3 C Dill, rough chopped
  • 2/3 C Cilantro, rough chopped
  • 2 Scallion, sliced

 

  • FOR THE DRESSING
  • 1 T coconut sugar
  • 1 lemongrass, minced
  • 1 1/2 T tamari
  • 1 T fish sauce
  • 2 T lime juice
  • 1/2 Thai chili, deseeded and minced
  • 1 garlic clove, minced
  • 1/3 cup pineapple, minced

 

  • Cooked vermicelli, fresh herbs and toasted peanuts to serve

Steps

  • Mix marinade together in a medium bowl and add fish to marinate for about 30-60 minutes.
  • Whisk together dressing and set aside.
  • Cook marinated fish in oil over high heat until almost fully cooked. Then add fresh herbs and scallion and cook for another minute.
  • In a bowl, add cooked fish on top vermicelli, and garnish with additional fresh herbs plus toasted peanuts.
  • Add dressing to taste.
  • Enjoy!
