SUMAC THYME SYRUP: Bring water to a boil, add sugar and stir until completely dissolved and then add sumac and thyme. Let sit for 30-45 min until completely cooled.
SPARKLING SUMAC THYME LEMONADE: For each serving, take a chilled 8oz glass, 1/4 cup thyme sumac syrup, 1 Tbsp lemon juice, top off with club soda. Add ice and stir. Serve immediately with a lemon wedge and a sprig of fresh thyme.
