Makes 1 cocktail


  • 1 oz fresh pomegranate juice
  • 1 slice lime
  • 1 oz raspberries
  • 2 oz gin
  • 2 oz Pink Moon rosé
  • Ice
  • Splash of sparkling water


  • Mash lime slice and raspberries in a glass. Fill the glass generously with ice and top with pomegranate juice, gin, rosé and a splash of sparkling water.
  • Stir and enjoy!
  • Roast the carrots for 25 minutes or until they begin to caramelize
  • Remove from the oven and add the honey and poppy seeds
  • Return to the oven and cook for another 5 minutes
  • Top with mint leaves
