Elderflower Liqueur1 1/2 cup, like St. Germain
Fig Leaves5
Chèvre8 oz log
Lavender2 tsp, dried
Thyme2 tsp, fresh
Steps
- Soak fig leaves in the liqueur in a covered shallow container, turning leaves occasionally, for 24 hours.
- Roll chèvre log in lavender and thyme. Slice the log into five equal coins.
- Wrap each coin in a fig leaf and tie the wrapped parcel closed with twine. Set in the fridge to cure. After a minimum of 24-48 hours, unwrap chèvre.
