Dark Rum2 oz
Ginger Juice1 oz fresh
Lime Juice1/2 oz freshly squeezed
Ginger Beer3 oz
Club Soda4 oz
Crystallized Ginger Slicesfor garnish
Lemongrass Simple Syrup1/4 oz see below
Granulated Sugar1/2 cup
Water1/2 cup
Lemongrass2 stalks, thinly sliced
Steps
- Fill a cocktail shaker with ice. Add the rum, ginger juice, lime juice, and simple syrup. Shake vigorously for 30 seconds
- Strain into a highball glass filled with ice. Top with ginger beer and club soda. Garnish with crystallized ginger slice.
- To make syrup, add all ingredients to a small sauce pot and bring to a simmer over medium heat. Once simmering, cover and cook for 15 minutes. Transfer into a heat safe jar and allow to cool to room temperature before refrigerating.
