Spiced Lemongrass Soup

Ingredients
FOR THE BROTH-
Water6 Cups
Shallot1
Kombu5 one-inch sized pieces
Assorted Mushrooms1 Cup
Lemongrass, smashed2 Stalks
Galangal,sliced1/3 cup
Makrut Lime Leaves 8 leaves
Star Anise2 Pods
Tamari1 tbsp
Lime,juiced1
Jalapeno, sliced1
Salt to taste
Mung Bean Sprouts1 Cup
Tofu, sliced1/2 block
Fresh Herb Mix - Mint, Cilantro, Thai Basil1/2 Cup
Rice Noodles4 oz
Steps
  1. In a large pot, gather broth ingredients and bring to a boil.
  2. Simmer for about 1 1/2 hours.
  3. Strain well, preserving only the broth.
  4. Combine broth with mung sprouts, sliced tofu, rice noodles and cook until noodles are near tender.
  5. Off heat, garnish with fresh herbs and additional lime juice as desired.
  6. Enjoy!
