Ingredients
FOR THE BROTH-
Water6 Cups
Shallot1
Kombu5 one-inch sized pieces
Assorted Mushrooms1 Cup
Lemongrass, smashed2 Stalks
Galangal,sliced1/3 cup
Makrut Lime Leaves 8 leaves
Star Anise2 Pods
Tamari1 tbsp
Lime,juiced1
Jalapeno, sliced1
Salt to taste
Mung Bean Sprouts1 Cup
Tofu, sliced1/2 block
Fresh Herb Mix - Mint, Cilantro, Thai Basil1/2 Cup
Rice Noodles4 oz
Steps
- In a large pot, gather broth ingredients and bring to a boil.
- Simmer for about 1 1/2 hours.
- Strain well, preserving only the broth.
- Combine broth with mung sprouts, sliced tofu, rice noodles and cook until noodles are near tender.
- Off heat, garnish with fresh herbs and additional lime juice as desired.
- Enjoy!
