Made in small batches and aged to perfection with organic Heirloom Tomatoes from Tutti Frutti Farms, this Vinegar harnesses the Tomato’s full flavor by naturally fermenting its skin, seeds, and pulp with native yeasts, Fennel Pollen flowers, and Rice Koji.

The Fennel Pollen adds citrus, floral, and anise notes for a complexity and sweetness reminiscent of their Summer harvest. Rice Koji has a poetic ability to transform, and contains acids and enzymes that add nuance, earthiness, and balance. The result is an unusually complex, surprising living Vinegar that’s very Tomato-forward, full of probiotics and antioxidants. Made by Chef Daniel Benhaim from Because The Wind, this Vinegar needs little else to uplift a dish. Perfect as a deglazer for pan roasted meats and vegetables, over crudo, as a savory shrub on salads, or as a fun spin to a Bloody Mary.
