Masa Memory Hot Sauce
When we had the opportunity to use the incredible Morita chile, we knew we had to collaborate with April Valencia from Masa Memory. Inspired by her Nanas, Mexico, and family food traditions, her Morita hot sauce is made using traditional methods -- each ingredient, the chiles, tomatoes, onion, and garlic are all roasted on the comal. Moritas are ripe jalapeños that have turned red and fruity. They are then dehydrated, rehydrated, and smoked. The name means "little blackberry" in Spanish because they tend to have a sweet aroma. To complement the chiles she uses three different vinegars -- Apple Cider, Blackberry, and her own Masa Memory Rose Moon Vinegar. The combination gives the sauce a smoky yet floral taste. It's a very special recipe with very special ingredients. We’re honored to collaborate with April in giving a portion of the Hot Sauce proceeds to Native Seeds/SEARCH, a nonprofit seed conservation dedicated to promoting crop diversity in support of sustainable farming and food security.
Biointensive Morita Chile Honey
We’ve taken our raw, antioxidant-rich Wildflower honey and infused it with the iconic Morita Chile, grown organically at nearby Windrose Farms. Morita Chiles are ripe jalapeños that have turned red and fruity. They are then dehydrated, rehydrated and smoked with apple wood from the farm's trees. We are lucky to have access to this iconic pepper through our good friends at Windrose Farms.
The Morita Chiles are sourced from farms in Mexico and California that use the finest growing methods and traditions. Windrose Farms provided the last of their Moritas which are grown with biodynamic methods in Paso Robles. April brought back beautiful woven bags of the most stunning deep red Moritas from Mexico. They were a gift and gesture of communion from the family who is building educational farms with April in Oaxaca and her southwest Arizona hometown. These farms will be run by Indigenous elders, who will pass down their knowledge to the community, preserving family food and farming traditions.
