Our White Rainier Cherries and Rose Hips were are organically grown in Washington. They are gently combined with Cacao Nibs and Ecuadorian Coffee Beans from the world-renown producer, Juan Peña, who has won numerous awards for the favor of his beans and the care he takes to grow them. Pacific Sea Salt is added after it's smoked with wood from the Alder Tree, giving it a rich, intense flavor. As always, our chocolate was created for us by the incredible Nick and Peter Dale - who have been crafting chocolates for us from the very beginning of Flamingo Estate. Every few months we discuss the inspiration for the season, and they dream up the most unexpected combinations for us. Salish Alderwood Smoked Salt
Fun Fact: The Alder tree thrives in areas near water. Alder wood actually becomes harder once immersed in water, making this a natural complement to sea salt! The dye from its flowers was supposedly used by Robin Hood and his merry men to camouflage their clothes in Sherwood Forest.

Coffee
The coffee is Ecuadorian and we roast it in house. It comes from world-renown producer, Juan Peña, who has won numerous awards including first place for Notable Coffee Producer from 2018-2020. Ecuador is only the size of Oregon, but it's the world's most biodiverse country and his coffees reflect a diverse array of profiles as a result.

I’m a big believer in serendipity. My friend Sandi Turner invited me to dinner at her home under a bright summer moon. During dinner she mentioned Nick and Peter Dale. She told me they had become culinary wonders in Athens, Georgia. Sandi spoke so passionately about their craft and told me she’d send me some chocolates. When those first bars arrived, covered generously in ingredients from the garden — I was stunned (and hooked). Nick and Peter are wizards, and I am honored to collaborate with them. Thanks Sandi, you will have free chocolate for life.
